Ariel D'Avila
He started in the kitchen in 2003 in his native Brazil, at the acclaimed restaurant D.O.M. and under the guidance of chef Alexa Taba (with 2 Michelin Stars).
The son of a Spanish mother, in 2006 he decided to migrate to Spain to learn about local gastronomy at Sacha, one of the most renowned restaurants where he learned about the excellence of Spanish products.
Years later, in 2014, the year they were awarded 1 Michelin Star, he joined the team at the PuntoMX restaurant.
By then, and thanks to some courses, he had already had his first contacts with the world of sushi, however it was not until 2016 when he decided to continue his learning in a self-taught way and take the leap by opening his first personal project: SUSHI EN BICI, a street food stand in the Mercado de la Cebada.
After three years, he decided to make another change and run a private sushi bar at Club Matador.
At that time, in the unique Chamberí neighborhood, the opportunity to open Nanako finally arose, an old dream that had already been brewing since Sushi en Bici. Here, he decided to take a risk and give way to his personality with a menu that unites Japan with his native Brazil and the incorporation of a Robata (traditional Japanese grill) into the equation.
